30-Minute Shrimp Scampi Pasta
There is something about shrimp scampi that makes a regular Tuesday feel a little special. Maybe it is the garlic and butter, maybe it is the fact that it comes together faster than my toddler can lose a shoe. Either way, this 30-minute shrimp scampi pasta is the dinner I make when I want to feel fancy without actually working for it.
I learned a long time ago that some of the best meals are the simplest ones. This is butter, garlic, a splash of wine, and shrimp that cook in about three minutes flat. The hardest part is boiling the pasta, and honestly we can all handle that.

The trick to perfect shrimp every time
Shrimp cook so fast that they go from tender to rubbery in the blink of an eye. The moment they turn pink and curl into a loose C shape, they are done. Pull them out, finish your sauce, and add them back at the very end so they stay juicy.
I always grab the largest shrimp I can find because they feel more luxurious and they are harder to overcook. If yours are frozen, just thaw them in a bowl of cold water while the pasta water comes to a boil.
Make it a whole meal
I love serving this with a big green salad and some warm bread to soak up the garlicky butter. A cold glass of the same wine you cooked with does not hurt either, at least on the nights I am not pregnant. These days it is sparkling water with lemon for me and I am still very happy about it.
If you want to stretch it for company, toss in a handful of cherry tomatoes or a few ribbons of spinach. It makes the plate prettier and sneaks in a little something green.

Notes
A dinner that always feels like a treat
This is one of those meals that tastes like you really tried, even when you are running on fumes. It has saved more than one of my chaotic weeknights, and I hope it does the same for yours.
So glad you are here.
