Apple Cider Moscow Mule (The 3-Minute Fall Cocktail Everyone Asks For)

Okay, confession time. I bought a set of copper mugs about four years ago because they looked cute on a bar cart, and then they sat there looking cute for roughly three of those four years. This drink is the reason they finally earned their keep. An apple cider Moscow mule is the fall cocktail I make when people come over and I want to look like I tried, when in reality I dumped four things in a mug and stirred it with a cinnamon stick.

It is crisp, a little spicy from the ginger beer, and the cider makes it taste like a hayride in a cup. We had a few friends over last weekend for the Chiefs game and I made a pitcher of these before kickoff. They were gone by the second quarter. Gone. I had to make another batch during a commercial break, which honestly is the highest compliment a cocktail can get in my house.

Heads up, a couple of the links below are affiliate links, which just means I get a tiny commission at no cost to you if you shop through them. Copper mugs are a good investment, I promise.

Why you will love this apple cider mule

It takes three minutes. No shaker, no muddling, no simple syrup on the stove. You pour cider and vodka over ice, top it with ginger beer, squeeze a lime, and you are done. That is the whole thing. If you can make a glass of chocolate milk, you can make this.

It also scales beautifully. One mug for you on a Tuesday night after bedtime, or a whole pitcher for a Friday night bonfire. And it is the perfect “I do not know what everyone drinks” cocktail, because it is not too sweet, not too boozy, and the apple flavor makes even my friends who claim they hate vodka ask for a second one.

Bonus: it looks gorgeous. The copper mug frosts over, you drop in an apple slice and a cinnamon stick, and suddenly you have a Pinterest photo without doing anything Pinterest-y.

Ingredients you will need

Everything here is grocery store basic. The one thing I will say is that the cider matters. Grab the real, cloudy, refrigerated apple cider from the produce section, not the clear apple juice in the juice aisle. If you have been to one of the orchards around Kansas City lately, the jug you brought home is exactly what you want.

Red apples and cinnamon sticks, the flavors in an apple cider mule

For one mule you need fresh apple cider, vodka, a good spicy ginger beer (not ginger ale, they are not the same thing and the mule police will come for you), a lime, and cinnamon sticks plus apple slices for garnish. For the pitcher version, the full amounts are in the recipe card below, along with a splash of caramel vodka you can swap in if you want it to taste like a caramel apple.

The ginger beer I reach for most is Fever-Tree, because it has actual ginger bite instead of just sugar. If you cannot find it, any ginger beer labeled “spicy” or “extra ginger” will do the job.

How to make it, step by step

Fill your copper mug (or any tall glass, I am not the mug police) all the way with ice. More ice than you think, because it keeps everything cold and the drink stays crisp instead of watering down fast.

Pour in the vodka and the apple cider. Squeeze in the juice of half a lime, then top it off with the ginger beer. Give it one gentle stir with a cinnamon stick so you keep the bubbles, and leave the stick in the mug. Slide an apple slice onto the rim, and that is it. Seriously, that is the whole recipe.

The full measurements, plus the pitcher version for a crowd, are in the printable card just below.

Apple Cider Moscow Mule

A crisp, spicy fall twist on the classic Moscow mule made with fresh apple cider, vodka, ginger beer, and lime. Three minutes, no shaker, and it scales to a pitcher for game day.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 1 mule (pitcher serves 8)
Course: Drinks
Cuisine: American

Ingredients

For one mule
  • 2 oz vodka
  • 3 oz fresh apple cider the cloudy refrigerated kind, not apple juice
  • 1/2 lime juiced, about 1/2 oz
  • 3 oz spicy ginger beer chilled
  • 1 cinnamon stick for stirring and garnish
  • 1 thin apple slice for garnish
  • ice
For a pitcher (serves 8)
  • 2 cups vodka
  • 3 cups fresh apple cider
  • 1/2 cup fresh lime juice about 4 limes
  • 3 cups spicy ginger beer chilled, added at serving
  • 8 cinnamon sticks
  • 1 apple thinly sliced

Method

  1. Fill a copper mug (or any tall glass) all the way to the top with ice.
  2. Pour in the vodka and the apple cider, then squeeze in the juice of half a lime.
  3. Top with the ginger beer and give it one gentle stir with a cinnamon stick to keep the bubbles.
  4. Leave the cinnamon stick in the mug, tuck an apple slice on the rim, and serve right away.
  5. For a pitcher: stir the vodka, cider, and lime juice together in a pitcher and chill. Right before serving, add the ginger beer, then pour over ice-filled mugs and garnish each with a cinnamon stick and apple slice.

Notes

Mocktail: skip the vodka and add an extra splash of cider.
Caramel apple version: swap the plain vodka for caramel vodka.
Make ahead: mix the cider, vodka, and lime juice up to 3 days ahead and refrigerate. Add ginger beer and ice only when serving.
Cinnamon sugar rim: run a lime wedge around the rim and dip in a mix of 1 tablespoon sugar and 1/2 teaspoon cinnamon before adding ice.

Tips, swaps, and making it ahead

Make it for a crowd. For a pitcher, combine the cider, vodka, and lime juice ahead of time and keep it in the fridge. Add the ginger beer right before serving so it stays fizzy. If you add it early, you get flat, sad mules, and nobody wants a sad mule.

Rim the mug. If you want it to feel extra, run a lime wedge around the rim and dip it in a mix of cinnamon and sugar before you add ice. It takes ten seconds and people lose their minds over it.

Make it a mocktail. Skip the vodka and add a little extra cider. My mom drinks it this way and swears it is better, which I will neither confirm nor deny.

Warm it up. On a truly cold night, heat the cider with a cinnamon stick, pour it into a mug with the vodka, and top with just a splash of ginger beer. It is a totally different drink and it is wonderful on the porch in November.

Copper mugs. I use this style of set, and I finally learned that the mug gets frosty because copper conducts cold, so it really does make the drink feel colder. Science, but make it cute.

Pitcher. A glass pitcher with a lid is great for the make-ahead base, and it looks nicer on the counter than a mixing bowl with plastic wrap, which is what I used for years.

Quick recipe details

Prep time: 5 minutes. Cook time: none. Servings: 1 mule, or a pitcher for 8. Storage: the cider and vodka base keeps in the fridge for up to 3 days. Do not add ginger beer until you serve it. Ice, garnish, and ginger beer are always last-minute.

The takeaway

This is the drink I want you to keep in your back pocket from now until Thanksgiving. It is three minutes of effort, it uses the cider you already bought, and it makes a Tuesday night feel a little more like a celebration. If you make it, tell me how you garnished it, or whether you went full caramel apple with the vodka swap. Drop it in the comments, I read every single one.

So glad you are here.

xo, Pam
