Apple Cinnamon Oatmeal Bake
This Apple Cinnamon Oatmeal Bake is my favorite Sunday meal prep move. I pop it in the oven while we do morning stuff as a family, and then we have warm, cozy breakfasts ready to pull from the fridge all week long. It smells absolutely incredible while it bakes too.
Why You’ll Love This
It is naturally sweetened with maple syrup, packed with whole grains and fruit, and honestly tastes like apple pie for breakfast. Make it once and you are set for the whole week.
Ingredients
- 2 cups rolled oats
- 2 apples, peeled and diced
- 2 tsp cinnamon
- 1/4 cup maple syrup
- 2 eggs
- 2 cups milk
- 1/2 cup chopped walnuts
How to Make It
Preheat oven to 375 degrees and grease an 8×8 baking dish. Mix oats, cinnamon, and walnuts in the dish. Whisk together eggs, milk, and maple syrup, then pour over the oat mixture. Stir in the diced apples and press everything down evenly. Bake for 35 to 40 minutes until set and lightly golden on top. Let it cool a bit before slicing. Reheat individual portions in the microwave with a splash of milk for a perfect weekday breakfast.
