Avocado toast on sourdough with everything bagel seasoning and a fried egg

Avocado Toast with Everything Bagel Seasoning

I know, I know. Avocado toast. Very 2016. And yet I make it multiple times a week because it is genuinely delicious and takes ten minutes and requires almost no dishes. Some things earn their classic status for a reason.

The everything bagel seasoning is what takes this from basic to actually exciting. That combination of sesame seeds, poppy seeds, garlic, and onion adds so much flavor and crunch that I honestly cannot eat avocado toast without it anymore. If you do not have a jar in your pantry, go get one. You will put it on everything.

Tips for Next-Level Avocado Toast

Bread matters a lot here. A thick slice of sourdough with a real crust gives you structure and that satisfying crunch. Thin sandwich bread goes limp under the avocado. Pick an avocado that gives slightly when pressed, too firm and it will not spread, too soft and it tastes off. Season the avocado itself, not just the top. Salt, pepper, and lemon juice stirred right into the mash makes a huge difference. I keep a jar of everything bagel seasoning on my counter at all times, it is one of the most useful pantry items ever. A fried egg on top turns this into a genuinely filling breakfast.

  3. Spread the mashed avocado generously over each slice of toast.
  4. Sprinkle everything bagel seasoning over the top. Add red pepper flakes if you like heat.
  5. Top with a fried or poached egg and microgreens if using. Serve immediately.

Notes

Add a fried or poached egg on top for extra protein. Eat immediately so the toast stays crispy.
