Total Time 45 minutes
Servings: 4 servings
Course: Main Course
Cuisine: Italian

Ingredients

  • 4 boneless skinless chicken breasts halved lengthwise into cutlets
  • 1.5 cups panko breadcrumbs
  • 3/4 cup parmesan, grated
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 cups marinara sauce
  • 8 oz fresh mozzarella, sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Method

  1. Heat the oven to 425 degrees and set a wire rack inside a sheet pan.
  2. Set out three dishes: flour seasoned with the salt and pepper, beaten eggs, and the panko mixed with half the parmesan and the olive oil.
  3. Dredge each cutlet in flour, then egg, then press it firmly into the panko mixture.
  4. Set the cutlets on the rack and bake 20 minutes, until deep golden and cooked through.
  5. Spoon marinara over each cutlet and lay the mozzarella on top, then scatter the remaining parmesan.
  6. Broil 3 to 4 minutes, watching closely, until the cheese is bubbling and browned in spots.

Notes

Bake the cutlets on a wire rack so the underside stays crisp. Add the sauce only at the end so the crust never gets soggy.
