BBQ Chicken Stuffed Sweet Potatoes
These BBQ chicken stuffed sweet potatoes are what happens when I want comfort food but also want to feel a little virtuous about it. You get the cozy, filling sweet potato, the smoky saucy chicken, a little cheese, and a drizzle of ranch to bring it all home. It hits every craving at once.
This is my go to when I have leftover chicken hanging around or a rotisserie bird from the store. It feels like a complete, hearty meal but it is genuinely so simple to throw together. My kind of dinner.

The ultimate shortcut dinner
The beauty of this recipe is how forgiving it is. Grab a rotisserie chicken, your favorite BBQ sauce, and you are most of the way there. The oven does the work on the sweet potatoes while you barely lift a finger.
If you bake potatoes a lot like we do, a sturdy half sheet baking pan is worth every penny, and a good pair of oven mitts saves your hands when you are wrangling hot potatoes.

Make it your own bar
I love turning this into a little build your own situation when we have people over. Set out the baked sweet potatoes and bowls of BBQ chicken, cheese, ranch, green onions, maybe some corn or black beans, and let everyone load up their own. It is fun, it is low pressure, and somehow the picky eaters always eat more when they get to choose.
These also reheat beautifully, so I purposely make extra for lunches throughout the week.

Notes
Cozy and craveable
This is the kind of meal that makes everyone at the table happy without making me work too hard, which is exactly the balance I am always chasing. Give it a try on your next busy night and I think it will earn a regular spot for you too.
So glad you are here.
xo, Pam
