If you have ever opened a jar of Biscoff cookie butter and found yourself eating it by the spoonful straight from the pantry, this recipe was made for you. These Biscoff Cookie Butter Truffles are no-bake, four-ingredient bites of pure joy that taste like a fancy candy shop creation but come together in about 30 minutes. I started making these as holiday gifts a few years ago and now they are the most requested treat in my entire recipe rotation. Every single time I bring them anywhere, the plate is empty within minutes.

The filling is creamy and spiced with that signature caramelized, gingery Biscoff flavor, the chocolate shell gives a satisfying snap, and the crushed cookie coating on top adds just the right crunch. They are stunning, they are impressive, and absolutely nobody needs to know how easy they were to make.

Biscoff Cookie Butter Truffles

No-bake Biscoff cookie butter truffles rolled in crushed Biscoff cookies and dipped in chocolate. Only 4 ingredients and ready in 30 minutes.
Prep Time 20 minutes
Total Time 50 minutes
Servings: 24 truffles
Course: Dessert

Ingredients

  • 1 cup Biscoff cookie butter spread
  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 10 oz dark or milk chocolate chips for coating
  • 1/2 cup crushed Biscoff cookies for rolling, optional

Method

  1. Beat together cookie butter, cream cheese, and powdered sugar until smooth and well combined.
  2. Cover and refrigerate the filling for at least 30 minutes until firm enough to scoop.
  3. Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet. Freeze for 15 minutes.
  4. Melt chocolate in 30-second microwave intervals, stirring until smooth.
  5. Dip each truffle ball in chocolate, letting excess drip off. Return to parchment. Immediately sprinkle with crushed Biscoff if using.
  6. Let set at room temperature or refrigerate 10 minutes until chocolate is firm. Store chilled.

Notes

Chill the filling until very firm before rolling for the cleanest balls. Work quickly and return to fridge if they soften. Store in the fridge for up to 10 days.

Why Biscoff Truffles Are So Addictive

Biscoff cookie butter is made from those thin, spiced Belgian speculoos cookies that you might recognize from airplane snack time, and it has this deeply caramelized, warmly spiced flavor that is completely unlike anything else. When you blend it with cream cheese and powdered sugar and coat the whole thing in chocolate, you get a truffle that is sophisticated and comforting at the same time. The texture is silky smooth and melts the moment it hits your tongue.

Tips for Perfect Truffles

The most important step is chilling the filling long enough before you try to roll it. If it is too soft, the balls will flatten and stick to your hands. I like to refrigerate the mixture for at least 30 minutes, then scoop and roll quickly, and freeze for another 15 minutes before dipping in chocolate. This keeps everything firm and gives you beautifully round truffles that hold their shape perfectly in the chocolate.

For the chocolate coating, use a good quality chocolate and melt it low and slow. You can use a fork to dip each truffle, tap off the excess on the edge of the bowl, then slide it onto parchment paper. Sprinkle with crushed Biscoff crumbs right away before the chocolate sets for that gorgeous finishing touch.

Make It Your Own

Swap dark chocolate for white chocolate coating for a different look and flavor profile. Add a pinch of cinnamon or cardamom to the filling for extra warmth. You can also roll the truffles in cocoa powder, crushed graham crackers, or toasted coconut instead of dipping them entirely in chocolate for a quicker finishing option. Package a dozen in a little bakery box tied with ribbon and you have the most impressive homemade gift anyone could receive.

Biscoff Cookie Butter Truffles are proof that no-bake does not mean boring. These little bites punch way above their weight in flavor, texture, and presentation. Make a double batch because they go fast, store beautifully in the fridge for up to 10 days, and somehow taste even better on day two. Your people are going to love you for these. xo, Pam
