Brown Butter Rice Krispy Treats
Can I tell you about the moment I made brown butter rice krispy treats for the first time and immediately understood that I had been living wrong? Regular rice krispy treats are good. These are on a completely different level. Browning the butter takes maybe five extra minutes and transforms the flavor into something deep, nutty, and almost caramel-like that makes people stop mid-bite and ask what is in these. The answer is just butter that you actually paid attention to.
The other trick is using a large heavy-bottomed saucepan so the butter browns evenly without burning. I use a large heavy saucepan from Amazon for this and it makes the whole process so much more controlled. Brown butter has a narrow window between perfect and burnt so good equipment really matters here. (Affiliate link — thank you for supporting Sideofglam!)
What Makes These Different
Two things: brown butter and extra marshmallows. Brown butter adds that incredible nutty depth that regular melted butter just does not have. And stirring in an extra cup of marshmallows at the end — off the heat — creates these incredible gooey pockets throughout every bar. It is a small change that makes a huge difference in both texture and flavor.

Ingredients
Method
- Grease a 9×13 pan with butter or cooking spray.
- Melt butter in a large saucepan over medium heat, stirring frequently, until golden brown and nutty-smelling, about 5 to 6 minutes.
- Remove from heat. Add 10 oz marshmallows, vanilla, and salt. Stir until melted.
- Fold in cereal until fully coated. Stir in reserved 1 cup marshmallows for gooey pockets.
- Press gently into prepared pan with buttered hands. Let set 10 minutes before cutting into bars.

Tips for Perfect Bars
Do not pack the mixture too tightly into the pan — press gently with buttered hands or a sheet of wax paper. Over-packing makes them dense and tough instead of light and chewy. Also resist cutting them for at least 10 to 15 minutes so they can set up properly. I know it is hard to wait but the payoff is worth it.

These keep well in an airtight container at room temperature for up to 3 days. Wrap individual bars in plastic wrap if you want to keep them longer or pack them for lunchboxes. They are also amazing slightly warmed in the microwave for about 10 seconds — that gooey marshmallow comes right back to life.

The No-Bake Dessert That Always Gets Compliments
These are my go-to when I need something fast, crowd-pleasing, and genuinely impressive without turning on the oven. They come together in under 30 minutes, everyone loves them regardless of age, and the brown butter thing always sparks conversation. Make a pan this weekend — you will not regret it.
xo, Pam
