Buffalo Chicken Dip
There are a few foods that turn me into a person with absolutely no self control, and buffalo chicken dip is at the very top of that list. Warm, creamy, a little spicy, and loaded with cheese and chicken. I cannot be trusted around it, and honestly I have made peace with that.
This is my go to for game days, casual hangouts, and any time I need to feed a crowd without spending my whole afternoon in the kitchen. If you keep a rotisserie chicken on hand, this comes together in about ten minutes of actual work. The oven does the heavy lifting while I wrangle my toddler.

The shortcut that makes this so easy
Rotisserie chicken, friends. I shred it warm right out of the package and it saves me so much time. You can absolutely cook and shred your own chicken, but on a busy week I am all about that grocery store rotisserie bird. No shame in our shortcut game.
The other thing I love is that you can make this as mild or as fiery as you want. Start with a little hot sauce, taste, and add more. My husband likes it hot enough to make him sweat, but I keep it a touch milder for the rest of us.
A few things that make it easier
Here are the kitchen things I reach for when I am whipping this up.
- A cast iron skillet that goes from oven to table looking rustic and cute
- A good buffalo hot sauce for that classic tangy kick
- Shredder claws if you hate shredding chicken by hand like I do

What to serve it with
Sturdy tortilla chips are my favorite, but celery sticks, carrot sticks, and toasted baguette all work beautifully. I usually set out a little of everything so people can dig in however they like. Just be warned, it goes fast, so make a big batch.

Notes
Your new crowd favorite
Make this once and I promise it becomes the thing people request from you every single time. It is comfort food in dip form, and we could all use a little more of that.
So glad you are here.
