Cuisine: Mexican

Ingredients

For the steak
  • 1.5 lbs flank or skirt steak
  • 1/4 cup orange juice
  • 3 tbsp lime juice
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 cup cilantro, chopped
For serving
  • 12 corn tortillas
  • 1 white onion, diced
  • 1/2 cup cilantro
  • 2 limes, cut into wedges

Method

  1. Whisk the orange juice, lime juice, garlic, cumin, and cilantro. Marinate the steak 20 minutes or up to overnight.
  2. Grill over high heat to medium-rare, about 4 minutes per side. Rest 5 minutes.
  3. Slice the steak thinly against the grain and chop into small pieces.
  4. Warm the tortillas and double them up. Fill with steak.
  5. Top with onion, cilantro, and a squeeze of lime.

Notes

Slicing against the grain keeps the steak tender. Double the tortillas so they do not tear.
