Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup milk
  • 1 onion, finely diced
  • 2 jalapenos, diced

  • 1/3 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt

Method

  1. Mix the beef, breadcrumbs, egg, milk, onion, Worcestershire, and salt until just combined.
  2. Press half the mixture into a loaf pan. Layer the cheddar and jalapenos down the center, leaving a border.
  3. Top with the remaining meat mixture and seal the edges to enclose the filling.
  4. Brush the top with ketchup and bake at 375F for 50 to 55 minutes, until cooked through.
  5. Rest 10 minutes before slicing so the cheese sets slightly.

Notes

Remove the jalapeno seeds for milder heat. Let the meatloaf rest so it slices cleanly.
