Chicken Alfredo with Fettuccine
If there is one pasta dish that my kids request on repeat, it is chicken alfredo. There’s something about that rich, creamy sauce clinging to fettuccine noodles that just hits different — it feels indulgent and special even on a random Tuesday. And the best part? When you make it at home it is so much better than any takeout version and honestly not that hard at all.
The key to a really good Alfredo is skipping the jarred sauce and making it from scratch with just butter, garlic, heavy cream, and freshly grated Parmesan. It takes maybe 10 minutes and the difference is absolutely wild. (some links here are affiliate links, which just means I earn a small commission at no extra cost to you)
Why Homemade Alfredo is Worth It
Store-bought Alfredo sauce has a bunch of stabilizers and preservatives that make it thick in a gloppy way rather than silky. When you make it yourself you get this beautiful, glossy sauce that actually coats the pasta instead of sitting on top of it. Plus you can control the salt level and the garlic and honestly customize it exactly how you like it.
Having a good large pasta pot makes cooking fettuccine so much easier because the noodles need room to move around and cook evenly. And a quality colander that can handle the weight of a big pot of pasta is one of those kitchen tools you don’t think about until you really need it.

Tips for Perfect Chicken Alfredo
Always use freshly grated Parmesan cheese — not the stuff in the green can, and not even the pre-shredded bags. The anti-caking agents in pre-shredded cheese prevent it from melting properly and you end up with a grainy sauce. Take the extra two minutes to grate it yourself and you will immediately notice the difference.
Save some pasta water before you drain! The starchy water is what helps bring the sauce together and keeps it from getting too thick. I always reserve at least half a cup even if I don’t end up using all of it.

Ingredients
Method
- Cook fettuccine in a large pot of salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- Season chicken with salt and pepper. Heat 2 tbsp butter in a large skillet over medium-high heat. Cook chicken 5-6 minutes per side until golden and cooked through. Slice and set aside.
- In the same skillet, melt remaining butter over medium heat. Add garlic and cook 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Cook 3-4 minutes until slightly thickened.
- Remove from heat and stir in Parmesan until melted. Add pasta and toss, using reserved pasta water to reach desired consistency. Top with sliced chicken and parsley.
Notes

Make It Your Own
This recipe is endlessly adaptable. Swap the chicken for shrimp and you have a totally different but equally amazing meal. Add some wilted spinach or roasted broccoli for some veggies. A pinch of nutmeg in the Alfredo sauce is a classic Italian touch that adds a subtle warmth you might not be able to put your finger on but everyone will ask about.
This is genuinely one of the most requested dinners in our house and I think once you try the homemade version you’ll completely understand why. Let me know if you make it!
xo, Pam
