Chicken and Sweet Potato Curry

Chicken thighs and sweet potato simmered in a coconut curry until the potato goes soft at the edges and thickens the whole pot. Spinach and lime at the end keep it fresh.

Servings: 6 servings
Course: Main Course
Cuisine: Indian

Ingredients

  • 1.5 lbs boneless skinless chicken thighs cut into chunks
  • 2 medium sweet potatoes peeled and cubed
  • 1 can (14oz) coconut milk
  • 3 tbsp curry paste
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup chicken broth
  • 5 oz baby spinach
  • 1 lime, juiced
  • 1/2 cup fresh cilantro, chopped
  • 1 tbsp neutral oil
  • 1 tsp salt

Method

  1. Warm the oil in a large pot over medium heat. Cook the onion 4 minutes until soft, then add the garlic and ginger for 1 minute more.
  2. Stir in the curry paste and cook 1 minute, until it smells fragrant and darkens slightly.
  3. Add the chicken and turn it in the paste until coated on all sides.
  4. Pour in the coconut milk and broth, add the sweet potato and salt, and bring to a gentle simmer.
  5. Cover and cook 25 to 30 minutes, stirring now and then, until the sweet potato is tender and the sauce has thickened.
  6. Stir in the spinach a handful at a time until it wilts, then finish with the lime juice and cilantro.

Notes

Cut the sweet potato small so it cooks in the same time as the chicken. Leftovers thicken overnight, loosen with a splash of broth.
