Golden grilled crunchwraps cut open on a plate with salsa and guacamole

Chicken Bacon Ranch Crunchwraps (30 Minute Weeknight Dinner)

We are two weeks into the school year and I have already hit the wall where nobody wants to hear the words “leftover chicken” again. Last Tuesday I stood in front of the fridge holding a rotisserie chicken like it had personally wronged me, and then I remembered the crunchwrap. Same chicken. Completely different attitude.

If you have never made one at home, a crunchwrap is just a big flour tortilla folded around a filling with a crispy tostada shell tucked in the middle, then griddled until the whole thing is golden and sealed. It looks like a fast food splurge and it takes about thirty minutes. My kids think I am doing something impressive. I am not. I am using ranch dressing.

Why you will love these

They are a weeknight dinner that feels like a reward. The filling is creamy without being soupy, the bacon does the heavy lifting flavor-wise, and the tostada shell in the middle keeps everything from turning into a sad soft wrap. That crunch is the entire point.

They also scale. I have made four for a normal Tuesday and I have made twelve for a house full of middle schoolers after a football game. The filling comes together in one bowl, so the only real work is the folding, and honestly the folding is kind of satisfying once you do the second one.

What you need

For the filling: 3 cups cooked shredded chicken, 6 slices bacon cooked and crumbled, 4 oz softened cream cheese, half a cup of ranch dressing, 1 and a half cups shredded sharp cheddar, half a teaspoon garlic powder, and a quarter teaspoon black pepper.

For assembly: 4 burrito-size flour tortillas (the 12-inch ones, do not try to cheat with taco size, I have tried), 4 tostada shells, 1 cup shredded lettuce, 1 diced roma tomato, and 2 tablespoons butter for the skillet. Full measurements are in the printable card at the bottom of the post.

Two things worth having on hand: tostada shells keep forever in the pantry and are the difference between a crunchwrap and a quesadilla, and a good 12-inch cast iron skillet gives you that even golden sear you cannot get from a thin nonstick pan. If ranch dressing is not your thing, a packet of ranch seasoning mix stirred into sour cream works just as well.

How to make them

1. Stir the chicken, bacon, cream cheese, ranch, cheddar, garlic powder, and pepper together in one big bowl. Let the cream cheese actually soften first or you will be fighting it.

2. Lay a tortilla flat and mound about a quarter of the filling in the center, keeping it inside a circle roughly the size of your tostada shell.

3. Set the tostada shell right on top of the filling, then add lettuce and tomato on top of the shell. Putting the cold stuff above the shell is what keeps the lettuce from wilting into nothing.

4. Fold the tortilla edges up and over the center, pleating as you go, until it seals into a hexagon. If your last fold does not quite reach, patch the gap with a scrap of tortilla before you flip it.

5. Melt the butter in your skillet over medium heat, set the crunchwrap seam side down, and press gently with a spatula. Cook 2 to 3 minutes per side until deep golden.

6. Let them rest a minute before cutting so the cheese sets, then slice in half and serve with extra ranch for dipping.

Tips, swaps, and make-ahead

Seam side down first, always. That first press is what glues the whole thing shut. If you flip too early you will get a crunchwrap that unfolds in the pan, and then you are just eating a very messy skillet.

Medium heat, not high. High heat browns the tortilla before the cheese inside melts. Patience for four minutes, I promise it is worth it.

Swaps that work: buffalo sauce instead of half the ranch for the adults, pepper jack instead of cheddar, or leftover taco meat instead of chicken. My picky one gets hers with no tomato and she has never once noticed the difference.

Make ahead: mix the filling up to 3 days in advance and keep it covered in the fridge. You can also assemble the crunchwraps, wrap them tightly, and refrigerate for a day before griddling. Cooked leftovers reheat best in an air fryer at 350F for about 4 minutes. Do not microwave them unless you have made peace with a soggy shell.

  • 4 tostada shells or a handful of sturdy tortilla chips
  • 1 cup shredded romaine or iceberg lettuce
  • 1 roma tomato, diced

Method

  1. In a big bowl, stir together the shredded chicken, crumbled bacon, softened cream cheese, ranch dressing, cheddar, garlic powder, and pepper until everything is coated and creamy.
  2. Lay a tortilla flat. Pile about a quarter of the filling in the center, keeping it inside a circle roughly the size of your tostada shell.
  3. Set a tostada shell right on top of the filling, then add a small handful of lettuce and diced tomato on top of the shell.
  4. Fold the edges of the tortilla up and over the center, pleating as you go, until the whole thing is sealed in a hexagon. If the last fold will not reach, patch the gap with a small piece of tortilla before you flip it.
  5. Heat the butter in a large skillet over medium heat. Place the crunchwrap seam side down and press gently with a spatula. Cook 2 to 3 minutes, until deep golden and sealed.
  6. Flip and cook another 2 to 3 minutes on the second side. Repeat with the rest. Let them sit one minute before cutting so the cheese sets, then slice in half and serve with extra ranch.

Notes

Make ahead: the filling keeps in the fridge for 3 days, so you can mix it Sunday and griddle on a Tuesday. Leftover cooked crunchwraps reheat best in an air fryer at 350F for 4 minutes, never the microwave, or the shell goes soft.

The takeaway

This is the recipe I make when everyone is tired and slightly feral and I still want dinner to feel like something. It uses a chicken I did not cook, it dirties one bowl and one pan, and it comes out of the skillet looking like I tried. That is the whole win.

If you make these, tell me what you put inside yours, I am always looking for a new filling. Drop it in the comments.

So glad you are here.
xo, Pam
