Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings: 4 servings
Course: Main Course
Cuisine: Italian

Ingredients

  • 4 chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan
  • 4 cups spinach
  • 1/2 tsp Italian seasoning

Method

  1. Season and sear the chicken in olive oil until golden and cooked through. Remove.
  2. Cook the garlic briefly, then add the broth and cream.
  3. Stir in the Parmesan and Italian seasoning and simmer until slightly thick.
  4. Add the spinach and cook until wilted.
  5. Return the chicken to the sauce and serve over pasta or rice.

Notes

Pound the chicken even so it cooks through without drying. Fresh spinach wilts down a lot, so pile it in.
