Chicken Shawarma Wraps
Chicken shawarma is one of those meals that feels like a total treat but is actually really simple to pull off at home once you have the spice blend down. The combination of cumin, paprika, turmeric, and cinnamon creates this incredibly aromatic marinade that makes the chicken taste like it’s been cooking on a rotating spit all day — even though you’re just using your grill pan at home.
I started making this on nights when I wanted something that felt a little more exciting than regular grilled chicken, and it has become one of those recipes everyone asks me about. Tucked into a warm pita with garlic sauce and fresh veggies, it is absolutely dreamy. (some links here are affiliate links, which just means I earn a small commission at no extra cost to you)
Why Chicken Thighs Are the Move
I always make shawarma with boneless chicken thighs instead of breasts because they stay so much juicier, especially with the high heat cooking. Thighs are also more forgiving if you leave them on the heat a minute or two longer. And they have way more flavor. Honestly this is one recipe where I really won’t budge on the thighs.
A good cast iron grill pan gives you those gorgeous char marks and helps the chicken develop that slightly smoky, caramelized exterior that makes shawarma so irresistible. It’s one of the most used pans in my kitchen and worth every penny.

Make the Garlic Sauce
If you want to take this over the top, make a quick toum or garlic sauce. Blend garlic, lemon juice, salt, and oil together until you get a fluffy white paste. It sounds involved but takes like 5 minutes in a food processor and keeps in the fridge for weeks. It’s also incredible on everything — dip your fries in it, spread it on sandwiches, put it on literally everything.
If you want to keep things simple, a store-bought garlic sauce or tahini works great too. No judgment here, we’re making dinner not applying for a cooking show.

Serving Ideas
These wraps are amazing on their own but if you want to go all out, serve them with a simple cucumber tomato salad, some crispy fries, and extra garlic sauce on the side. It becomes a full Middle Eastern spread that feels really special and celebratory. Great for a dinner party where you want to impress but not stress.
If you try this recipe please let me know! I genuinely think once you make homemade shawarma you will never go back to ordering it out.
