Course: Main Course
Cuisine: Asian-Inspired

Ingredients

  • 1.5 lbs boneless skinless chicken thighs cut into bite sized pieces
  • 2 tbsp neutral oil
  • 3 cups broccoli florets
  • 2 carrots, sliced on the bias
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup teriyaki sauce
  • 1 tsp cornstarch
  • 2 tbsp water
  • 3 cups cooked rice for serving
  • 1 tsp sesame seeds

Method

  1. Heat 1 tablespoon of the oil in a large skillet or wok over high heat. Add the chicken in one layer and sear 4 to 5 minutes, stirring only occasionally, until browned and cooked through. Move it to a plate.
  2. Add the remaining oil, then the broccoli, carrots and bell pepper. Stir fry 4 minutes, until the vegetables are bright and just tender.
  3. Push everything to the side, add the garlic and ginger to the bare spot, and cook 30 seconds until fragrant.
  4. Whisk the cornstarch into the water, then pour it in along with the teriyaki sauce and the chicken.
  5. Toss for 1 to 2 minutes until the sauce thickens and coats everything.
  6. Serve over rice with sesame seeds scattered on top.

Notes

Thighs stay juicier than breast here. Cut everything before you start, stir frying moves fast once the pan is hot.
