Chorizo and Potato Breakfast Burrito

This Chorizo and Potato Breakfast Burrito is the kind of breakfast that sticks with you all morning long. It is hearty, a little spicy, and completely satisfying. I grew up eating food with big bold flavors and this burrito brings all of that to the breakfast table in the best way.

Why You’ll Love This

Crispy potatoes, spiced chorizo, fluffy scrambled eggs, and melty cheddar all wrapped up in a warm tortilla. It is filling enough to power you through the whole morning and easy enough to make on a busy weekday.

Ingredients

  • 2 large flour tortillas
  • 6 oz chorizo, casing removed
  • 1 cup diced potatoes
  • 4 eggs, beaten
  • 1/2 cup shredded cheddar
  • Salsa for serving

How to Make It

Cook diced potatoes in a skillet with oil over medium heat until golden and crispy, about 10 minutes. Remove and set aside. In the same pan, cook chorizo breaking it up as it goes, about 5 minutes. Push to the side and scramble your eggs in the same pan. Mix everything together with the potatoes. Warm your tortillas, pile on the filling, add cheddar, and roll them up tight. Serve with salsa and enjoy immediately.
