Churro Cheesecake Bars
Okay so I need to tell you about the dessert that has broken my brain in the best possible way. Churro cheesecake bars are exactly what they sound like — creamy cheesecake filling sandwiched between two layers of buttery crescent roll dough, topped with cinnamon sugar. They are impossibly easy to make (we are talking refrigerated crescent dough, people), they look absolutely stunning, and they taste like something you would wait in line for at a food festival. I brought these to a neighborhood cookout and had to send the recipe to six different people before I even got home.
The key is letting them cool completely before cutting — I know it is hard to wait but it is worth it. The cheesecake layer needs to set up or you will have a delicious but messy situation on your hands. I also highly recommend picking up a good 9×9 nonstick baking pan if you want thicker bars with more layers — the extra height makes such a difference in presentation. Why Crescent Roll Dough Works So Well
Refrigerated crescent roll dough is the ultimate shortcut here. It bakes up flaky and buttery, and when you press the seams together and top it with cinnamon sugar butter, it tastes genuinely like churro dough. It soaks up that cinnamon sugar on top and creates this gorgeous golden crust that crunches just slightly against the creamy filling. Honestly do not overthink it — just use the canned dough and watch the magic happen.

Ingredients
Method
- Preheat oven to 350F. Grease a 9×13 baking pan.
- Press one can of crescent roll dough into the bottom of the prepared pan, pinching seams together to form a solid layer.
- Beat cream cheese, 3/4 cup sugar, and vanilla together until smooth. Spread evenly over the crescent dough layer.
- Unroll second can of crescent dough and lay over the cream cheese layer, pinching seams.
- Brush melted butter over the top. Mix remaining 1/4 cup sugar with cinnamon and sprinkle generously over the butter.
- Bake 28 to 32 minutes until top is golden brown and center is set. Cool completely before cutting into bars. Refrigerate leftovers.

Make-Ahead Tips
These are actually better the next day, which makes them perfect for entertaining. Bake them the night before, let them cool, cover and refrigerate overnight, and pull them out when you are ready to serve. The flavors meld together beautifully and the texture is perfect. Cut them into squares or rectangles and stack them on a platter for a gorgeous presentation.

You can also customize these so easily. Add a layer of dulce de leche under the cream cheese for extra caramel richness, sprinkle some chopped pecans on top with the cinnamon sugar, or drizzle the finished bars with chocolate. Every variation is amazing and every version will get requested again immediately.
