Classic Key Lime Pie
Key lime pie is the dessert that instantly makes me feel like I am on vacation, even when I am very much standing in my Kansas City kitchen with a pile of laundry behind me. That cool, tangy, creamy filling with the buttery graham crust is pure sunshine, and it is so much easier to make than people think.
I bring this to summer cookouts and it is always the first thing gone. There is something about that bright lime flavor against the sweet creamy base that just makes people close their eyes for a second. It is a showstopper that takes almost no effort.

Fresh juice is everything
The flavor of this pie lives and dies by the lime juice, so please use fresh. If you can find actual key limes, wonderful, but they are tiny and fussy to juice, so regular Persian limes work beautifully too and nobody will know the difference. A little zest in the filling adds even more of that fragrant lime punch.
A handheld citrus juicer makes quick work of all those limes, and a fine zester gives you that pretty zest without any bitter pith.

Let it chill, truly
I know the hardest part is waiting, but this pie needs at least three hours in the fridge to set up properly. A well-chilled pie slices into clean, gorgeous wedges, while a warm one will slump. I usually make it the night before so it is ready to go and one less thing to fuss over on the day.
Bake it in a sturdy glass pie dish so you can see those pretty layers, then crown it with fresh whipped cream and a few lime slices right before serving.

Notes
Bring on the sunshine
Make this once and it will become your warm-weather signature. Tangy, creamy, cool, and just sweet enough. I hope it brings a little vacation feeling to your table too.
So glad you are here.
