Cowboy Caviar That Vanishes at Every Cookout
Every single summer there is one thing I get asked to bring, and it is never the fancy thing I spent two hours on. It is this bowl. Cowboy caviar shows up to the cookout looking like a confetti party, sits next to a bag of tortilla chips, and somehow ends up scraped clean before the burgers are even off the grill.
I love it because it is barely a recipe. You open a couple of cans, chop a bunch of pretty vegetables, shake a quick dressing in a jar, and let the fridge do the rest. It is the kind of thing I make on a Sunday in July when it is too hot to turn on the oven and we are basically living on the back patio anyway.
Heads up, a few of the links below are affiliate links, which just means if you grab something I get a tiny commission at no extra cost to you. I only point you to stuff I actually use.

Why you will love it
It is genuinely a dump and toss situation, so it is hard to mess up. It feeds a crowd for almost nothing. It gets better as it sits, which means it is the rare dish you actually want to make ahead. And it lands in that perfect summer sweet spot where it tastes fresh and bright but still feels like real food. Half of my friends call it a dip, the other half call it a salad, and honestly it is happy being both.
Ingredients
Here is everything that goes in. Nothing precious, and most of it is probably in your pantry already.
For the salad:
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 1/2 cups corn, grilled or thawed from frozen
- 1 red bell pepper, finely diced
- 1 orange or yellow bell pepper, finely diced
- 1 cup cherry tomatoes, quartered
- 1/2 red onion, finely diced
- 1 jalapeno, seeded and minced
- 1/2 cup fresh cilantro, chopped
- 1 avocado, diced and added just before serving
For the dressing:
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- juice of 1 lime
- 1 tablespoon honey
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/4 teaspoon black pepper
A little handheld lime squeezer is the one tool I reach for here, because fresh lime makes the whole thing, and I am not about to fish seeds out by hand.

How to make it
- Drain and rinse the black beans and black-eyed peas well, then add them to a large bowl.
- Add the corn, both bell peppers, cherry tomatoes, red onion, jalapeno, and cilantro.
- In a small jar, whisk together the olive oil, red wine vinegar, lime juice, honey, chili powder, cumin, salt, and pepper.
- Pour the dressing over everything and toss until coated.
- Cover and chill for at least 30 minutes so the flavors come together.
- Right before serving, fold in the diced avocado and serve with plenty of tortilla chips.
Tips, swaps, and make-ahead notes
This is the dish I always make a day early, because it truly tastes better the next morning. The one rule is to keep the avocado out until serving time so it stays bright green instead of going sad and brown on you. If you are feeding a bigger crowd, double it and use one of those big serving bowls with a lid so you can shake, chill, and travel in one container.
Swap the black-eyed peas for pinto or a second can of black beans if that is what you have. Grilled corn cut off the cob is incredible here in the summer, but frozen works all year. Want it as a scoopable dip rather than a salad? Chop everything a little smaller and reach for the sturdy scoop-style tortilla chips that can actually hold a load without snapping.
Quick recipe details
Prep time: 20 minutes. Chill time: 30 minutes. Servings: about 10 as a side or dip. Storage: keeps in an airtight container in the fridge for up to 3 days, though it rarely lasts that long around here.

Notes
The takeaway
If you only add one thing to your summer rotation this year, let it be this. It is cheap, it is forgiving, it travels, and it makes you look like the friend who has it all together at the cookout. You do not, none of us do, but the bowl says otherwise.
If you make it, come tell me what you tossed in, my version changes every week depending on what is in the crisper drawer. Drop it in the comments below.
So glad you are here.
xo, Pam
