Cowboy Caviar
Cowboy Caviar is one of those recipes that shows up at every single summer cookout and disappears within minutes every single time. I have been making this for years and it is still one of the most requested things I bring to parties. It is fresh, colorful, a little tangy from the lime, and works as a dip, a salad, a taco topping — honestly you can put it on everything.
The best thing about this recipe is that it comes together in 15 minutes with zero cooking required. Just chop, toss, and serve. I make a huge batch for game days, potlucks, and any time I need something that feeds a crowd without stressing me out. Grab a chip-and-dip serving set to make it look extra cute on the table — I linked my favorite one on Amazon below.
What Goes in Cowboy Caviar
The base is black beans and black-eyed peas, which sounds like a lot of beans but trust the process. Add corn, cherry tomatoes, red onion, and avocado and you have this beautiful colorful mix. The dressing is just lime juice, olive oil, cumin, and salt and it brings everything together perfectly.

Ingredients
Method
- Combine black beans, black-eyed peas, corn, tomatoes, red onion, and jalapeรฑo in a large bowl.
- Whisk together lime juice, olive oil, cumin, and salt. Pour over the bean mixture and toss to combine.
- Fold in diced avocado and cilantro. Taste and adjust seasoning. Serve immediately with tortilla chips or refrigerate up to 2 hours before serving (add avocado right before).
Notes
Tips for Making It Ahead
You can make everything except the avocado up to a day in advance and keep it in the fridge. The flavors actually get better as everything sits together. Add the avocado right before serving so it stays bright and fresh. If you want to skip the avocado entirely the dip keeps beautifully for 3 days.

Serving Ideas
Obviously amazing with tortilla chips but do not stop there. Spoon it over grilled chicken, stuff it into quesadillas, use it as a taco filling, or serve it alongside scrambled eggs for a Tex-Mex brunch situation. The lime dressing keeps it fresh tasting no matter what you do with it.
