Cranberry Brie Bites (The 30 Minute Holiday Appetizer That Looks Like You Tried)
Every holiday season I tell myself I am going to be the kind of hostess who has a cute little appetizer waiting when people walk in. And every year I end up ripping open a bag of tortilla chips at the last second while someone helps themselves to the shredded cheese in my fridge. This year I finally have a fix, and it is these cranberry brie bites. They look like I tried very hard. I did not.
Puff pastry, a little square of brie, a spoonful of cranberry sauce, a sprinkle of pecans and rosemary. Fifteen minutes in the oven. That is the whole thing. My boys call them “the fancy cheese muffins” and grab three at a time, which I have decided to take as a compliment.

Why you’ll love these cranberry brie bites
They hit that sweet, salty, buttery, flaky combination that makes everyone hover by the tray. The brie goes melty and rich, the cranberry keeps it from feeling heavy, and the pecans give you a little crunch so it is not just soft on soft.
They are also ridiculously forgiving. You do not need to make your own pastry or your own cranberry sauce. Everything comes from the freezer aisle and the canned goods aisle, and the whole batch bakes in a regular 24 cup mini muffin pan. If you love a spread with a little sweetness, my slow cooker apple butter is a great swap for the cranberry.
And they are the perfect walk in the door appetizer from Thanksgiving straight through New Year’s. Friendsgiving, book club, the neighbors who pop over during a Chiefs game, the school potluck where you signed up for “something savory” and immediately regretted it. These cover all of it. What I use to make them
The only tool that really matters is a nonstick 24 cup mini muffin pan. I have used a regular muffin pan in a pinch and they come out more like little tarts, still good, just not as poppable. A small cookie scoop makes the cranberry step less messy, a French rolling pin gets the pastry nice and even, and a pastry wheel and brush set makes cutting the squares (and brushing on a little egg wash if you want extra shine) so much faster.
To serve, I pile them on a marble serving board, set out a honey jar with a little wooden dipper for drizzling, and finish with a pinch of Maldon flaky sea salt. Let them cool for a couple of minutes on a cooling rack so the bottoms stay crisp, and stash leftovers in glass storage containers.
How to make them
Keep your puff pastry cold, roll it into a rectangle, cut 24 squares, and press them into the pan with the corners sticking up. Those corners get golden and crispy and are the best part.

Drop a cube of brie into each cup, top with about a teaspoon of cranberry sauce, then a sprinkle of pecans and rosemary. Bake until deeply golden and bubbling at the edges, then let them sit a few minutes before lifting them out. The full recipe card is below so you can print it.

Tips, swaps, and make ahead
Keep the pastry cold. If it gets warm and sticky while you are cutting, put the whole cutting board in the fridge for ten minutes. Cold pastry equals big flaky puff.
Leave the rind on the brie. It melts fine, it holds the cube together, and nobody has ever noticed. Removing it is a fussy job I refuse to do.
Swaps that work: fig jam or apricot preserves instead of cranberry sauce, walnuts instead of pecans, or a little orange zest in the cranberry for something brighter. If you are feeding a bigger crowd, pair these with my baked brie with jam and walnuts and pear gorgonzola crostini and you have a whole appetizer table.
Make ahead: assemble the bites in the pan, cover tightly, and refrigerate for up to 24 hours, then bake straight from the fridge (add a minute or two). Baked bites reheat nicely in a 350 degree oven for five to six minutes. Skip the microwave, the pastry goes limp and sad.
Doubling: two sheets of pastry come in the box, so doubling is basically free. I have never once regretted making 48.
