Creamy Macaroni Salad
If there is a cookout happening anywhere in a fifty mile radius, you can bet someone asked me to bring the macaroni salad. This creamy, tangy, crunchy version is the one that turned me from a casual macaroni salad eater into a full on devotee, and it has become my signature potluck contribution.
It is everything I want in a summer side. Cool and creamy, a little zippy from the mustard and vinegar, with just enough veggie crunch to keep it interesting. And the best part is that it is even better made ahead, which is a huge win when I am trying to get out the door with a toddler and a diaper bag and a salad bowl all at once.

The secret to creamy, not dry
Here is the thing nobody tells you. Pasta drinks up dressing as it sits, so a macaroni salad that looks perfect right after mixing can turn dry and sad by the time you serve it. My fix is to make the dressing a little more generous than you think you need, and to give the cooled pasta a good rinse so it is not gummy.
If you make it way ahead and it tightens up in the fridge, just stir in a splash of milk or a little more mayo before serving and it comes right back to creamy perfection. Crisis averted.
The little touches that matter
That tiny bit of sugar might feel odd, but trust me, it balances the tang and rounds everything out. The apple cider vinegar gives it brightness, and the finely diced celery, bell pepper, and red onion add color and that satisfying crunch. Dice everything small so you get a little of each in every bite.
I always make this the night before a gathering so the flavors have time to meld. By the next day it is exactly right, and I get to skip a step on a busy morning.
