Crispy Fried Calamari with Marinara
You know how restaurant calamari just hits different? The batter is light and shatteringly crispy and the calamari inside is tender (not rubbery!) and the whole thing disappears in about 30 seconds. I spent a long time trying to figure out the secret to getting that same result at home and I am so happy to say I cracked it. The answer is two things: cornstarch in the coating and a buttermilk soak.
Crispy fried calamari with marinara has become one of my favorite things to make for dinner party apps or a fun Friday night at home. It looks incredibly impressive on a platter but it takes under 30 minutes once you have the oil hot. A deep-fry thermometer and a spider strainer are the two tools that make this whole process easy and stress-free — I linked both on Amazon below because they are genuinely game changers for home frying.
The Secret to Crispy (Not Rubbery) Calamari
Three things matter most. First, pat the calamari completely dry before soaking in buttermilk — any excess water steams instead of fries and you end up with soggy coating. Second, add cornstarch to the flour — it is what gives you that light, crunchy, restaurant-style crust. Third, fry in small batches so the oil temperature stays at 375ยฐF. Crowding the pot drops the temperature and you end up with greasy calamari instead of crispy.

I use a deep fry thermometer to keep oil at the perfect temp and a spider strainer to scoop the calamari out cleanly — both are must-haves for home frying.

Crispy Fried Calamari with Marinara
Ingredients
Method
- Soak calamari in buttermilk for 15 minutes. Whisk flour, cornstarch, garlic powder, paprika, salt, and pepper in a shallow bowl.
- Heat 2 inches of oil in a heavy pot to 375ยฐF (use a deep-fry thermometer). Working in small batches, lift calamari from buttermilk, dredge in flour mixture, shaking off excess.
- Fry 1.5-2 minutes until golden and crispy. Remove with a spider strainer and drain on a paper towel-lined rack. Season immediately with a pinch of salt.
- Serve hot with warm marinara and lemon wedges.
Notes
What to Serve with Calamari
Warm marinara sauce is the classic and it is classic for good reason. The tangy tomato sauce is perfect against the crispy, salty calamari. Squeeze of lemon over the top right before eating is non-negotiable. I also love serving it with a simple aioli or even just garlic mayo on the side for something a little different. Pile it on a platter with lemon wedges and fresh parsley and watch it disappear.

Tips for Success
Season the calamari immediately after it comes out of the oil while it is still hot — that is when the salt really sticks. Set up a wire rack over a baking sheet lined with paper towels for draining so the bottoms do not get soggy from sitting in oil. Work quickly and keep your batches small. And eat it right away — fried calamari is truly best the second it comes out of the oil.
