Easy Peach Cobbler
There are about three desserts I can make with my eyes closed, and peach cobbler is right at the top of the list. It is the one I throw together when peaches are at their juiciest and I want the whole house to smell like cinnamon and butter without much effort on my part. Honestly, the hardest part is waiting for it to cool enough to eat.
This is the dump and bake style cobbler, which means you melt some butter, pour a simple batter over it, scatter peaches on top, and let the oven work its magic. The batter rises up around the fruit while it bakes, so you get these crispy golden edges and a soft, almost spoonbread middle. It feels like something my grandma would make, and that is the highest compliment I can give a recipe.

Fresh, frozen, or canned
I will let you in on a little secret. This cobbler works with whatever peaches you have. In the height of summer I go for fresh, but frozen peaches are fantastic the rest of the year, and yes, canned work in a pinch too. Just drain them really well so your cobbler does not get soggy. No peach shame in this kitchen.
How I like to serve it
Warm, always warm, with a melty scoop of vanilla ice cream sliding down the side. If I am feeling extra, a little whipped cream and a dusting of cinnamon. It is the kind of dessert that makes a regular Tuesday feel like a celebration, and around here we take any excuse to celebrate.

Method
- Preheat the oven to 350F. Pour the melted butter into a 9×13 inch baking dish.
- In a bowl, whisk together the flour, 3/4 cup of the sugar, the baking powder, milk, and vanilla until just combined. Pour the batter evenly over the melted butter. Do not stir.
- Scatter the sliced peaches over the batter. Sprinkle the remaining 1/4 cup sugar and the cinnamon over the top.
- Bake for 40 to 45 minutes, until the top is golden and the batter has risen up around the peaches.
- Let cool for 10 minutes, then serve warm.
Notes
One last thing
Cobbler leftovers, if you somehow have them, are weirdly amazing cold straight from the fridge the next morning. I am not saying I have eaten it for breakfast while standing at the counter, but I am also not denying it.
So glad you are here.
