Fresh Mango Salsa
Some recipes just taste like a good mood, and this fresh mango salsa is absolutely one of them. It is sweet, a little tangy, a touch spicy, and so bright and colorful that it makes me happy just to look at it. On a gray Kansas City day, a bowl of this is basically sunshine in food form.
I started making this when I needed something fresh to dress up plain grilled chicken, and now I put it on everything. Tacos, fish, rice bowls, or just scooped up with chips while I stand at the counter pretending I am going to save some for later. Spoiler, I never do.

Picking the right mango
You want mangoes that give a little when you press them, kind of like a ripe avocado. If they are still firm, leave them on the counter for a couple of days. The riper they are, the sweeter your salsa will be, which balances beautifully against the lime and jalapeno.
If you have never cut a mango before, do not panic. Slice down each side of the flat pit, score the flesh in a grid, then push the skin inward and the little cubes pop right out. It feels like a tiny kitchen magic trick every single time.
Make it your own
This salsa is so easy to play with. Add diced cucumber for crunch, swap in pineapple for half the mango, or toss in some black beans and corn to make it heartier. Want more heat? Leave some of the jalapeno seeds in. Want it mild for the kiddos? Take them all out.
I love letting it sit for about ten minutes before serving so all those flavors have a chance to get to know each other. It makes a real difference, and it gives you a moment to grab a chip and taste test. Quality control, obviously.

Notes
A little burst of fresh
This is the kind of recipe that turns an ordinary dinner into something that feels a little special. Whip it up, pile it on whatever you are eating, and enjoy that bright pop of flavor. We deserve the good stuff.
So glad you are here.
