Crispy fried mozzarella sticks with marinara dipping sauce

Fried Mozzarella Sticks

If you have ever ordered mozzarella sticks at a restaurant and thought “I could totally make these at home,” you are absolutely right — and they are even better homemade. The secret is double breading and freezing the cheese first so you get that perfect golden crust without the cheese exploding everywhere. I made these for a game night recently and they were gone in about four minutes flat. Not even joking.

The one tool that genuinely changed my frying game is a good deep fry thermometer. Oil temperature is everything with recipes like this — too hot and they brown before the cheese melts, too cool and you get greasy sad sticks. Once I started using one, my results went from good to restaurant-level. I have this deep fry thermometer from Amazon and it has paid for itself about a hundred times over. The Cheese Pull Secret

You know that dramatic slow cheese pull you see in every food video? That only happens when you fry at the right temperature AND use mozzarella that has been properly frozen. String cheese works perfectly here because each stick is already portioned — just cut them in half for the perfect bite-sized pieces. Double coating in egg and breadcrumbs is non-negotiable if you want that thick, crunchy exterior.

Prep Time 20 minutes
Cook Time 10 minutes
Total Time 30 minutes
Servings: 24 sticks
Course: Appetizer, Snack
Cuisine: American, Italian

Ingredients

  • 12 mozzarella string cheese sticks halved crosswise
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup Italian breadcrumbs
  • 1/2 cup Panko breadcrumbs for extra crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • vegetable oil for frying
  • 1 cup marinara sauce for dipping

Method

  1. Freeze mozzarella sticks for at least 30 minutes before frying — this prevents the cheese from melting out before the coating gets golden.
  2. Mix Italian breadcrumbs, Panko, garlic powder, and oregano in a shallow bowl. Place flour in another bowl and beaten eggs in a third.
  3. Dredge each frozen mozzarella stick in flour, dip in egg, then coat in the breadcrumb mixture. Repeat egg and breadcrumb for a double coat.
  4. Heat 2 inches of oil in a heavy pot to 350F. Fry mozzarella sticks in batches for 1 to 2 minutes until golden brown. Drain on paper towels.
  5. Serve immediately with warm marinara sauce for dipping.

Notes

Use a thermometer to keep oil at 350F — too hot and they brown before cheese melts, too cool and they get greasy. A fry thermometer from Amazon is a game changer for this: https://www.amazon.com/s?k=deep+fry+thermometer&tag=sideofglam-20

Tips for Perfect Mozzarella Sticks

Freeze your breaded sticks for at least 30 minutes before frying for the best results. Mix Panko with Italian breadcrumbs for maximum crunch. And fry in small batches — crowding the pot drops the oil temp and leads to soggy results. You’ve got this.

Serve these with warm marinara, but honestly ranch or even a spicy arrabbiata sauce is incredible too. These are also great for meal prep — bread them, freeze them, and pull out however many you need for game day or a quick snack. They go straight from freezer to fryer with no thawing needed.

Make These for Your Next Party

These are hands down one of the best party appetizers you can put out because everyone loves them, they can be prepped ahead, and they disappear fast — which means less cleanup for you. Make a big batch, keep them warm in the oven at 200F, and watch the compliments roll in.
