Ingredients

  • 2 cups dill pickle chips, drained
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 egg
  • 1/2 cup buttermilk
  • oil, for frying
  • 1/2 cup ranch dressing, for serving

Method

  1. Pat the pickle chips very dry with paper towels.
  2. Whisk the flour, cornmeal, paprika, and garlic powder in one bowl, and the egg and buttermilk in another.
  3. Dip each pickle in the buttermilk, then dredge in the cornmeal mixture.
  4. Fry in 350F oil in batches until golden and crisp, about 2 minutes. Drain on paper towels.
  5. Serve hot with ranch for dipping.

Notes

Drying the pickles well helps the batter stick and keeps the oil from spattering.
