Frozen Peach Bellini Slushies for Summer
Nothing says summer on the patio quite like something frozen and peachy in a pretty glass. These frozen peach bellini slushies are my warm weather hosting trick, the drink that makes a backyard hang feel like a little party.
They are basically a grown up slushie, blended peaches and prosecco poured over ice and sipped slowly while the string lights come on. They take about three minutes and they make everyone feel taken care of.

Why frozen is the move in summer
A classic bellini is lovely, but blend it into a slush and suddenly it is the most refreshing thing on a ninety degree day. The frozen peaches keep it cold without watering it down, and the texture is somewhere between a cocktail and dessert, which is honestly the best place to be.
What you need
Frozen peaches, a bottle of prosecco or sparkling wine, a splash of peach nectar, and a squeeze of lemon to keep it bright. Fresh peaches work too when they are in season, just add a handful of ice to get the slushie texture.
A sturdy blender is the only must have, and a set of coupe glasses makes it feel like an occasion. We drink with our eyes, and a good glass does a lot of the work.

How to make them
Blend the frozen peaches with the peach nectar and lemon until smooth. Add the prosecco last and pulse just to combine, you do not want to blast all the bubbles out. Pour into chilled glasses and garnish with a fresh peach slice or a sprig of mint. That is the whole thing.
An easy mocktail version
Since I am skipping the wine these days, I make mine with sparkling water or a good non alcoholic bubbly in place of the prosecco, and it is every bit as pretty and refreshing. Set up a little station with both and let everyone pour their own. No one feels left out, and that is the goal.
The takeaway
Summer entertaining is so much about the small touches, and a frozen drink in a beautiful glass is one of the easiest. Three minutes, one blender, a patio full of happy people. Tell me your go to summer sip in the comments, I am always topping off the rotation.
