Gooey Smores Bars
Some nights you want a campfire and a fire pit and the whole romantic summer evening thing. And some nights you are a tired mom who just wants the gooey chocolate marshmallow situation without setting anything on fire in the backyard. These s’mores bars are for the second kind of night, which around here is most of them.
They have everything I love about a classic s’more, the buttery graham flavor, the melty chocolate, the pillowy toasted marshmallow, all baked into a pan of bars you can slice up and hand out. My kid loses his mind over these, and honestly so do I. They feel like summer in dessert form, no bug spray required.

The trick to that toasted top
If you want that real campfire look with the golden, slightly charred marshmallows, pop the pan under the broiler for the last minute or two. Just do not walk away, because marshmallows go from perfect to little torches in about ten seconds. Ask me how I know.
A few things that make these easier
You really do not need anything fancy here, but a couple of basics help these come together fast.

Gooey Smores Bars
Ingredients
Method
- Preheat the oven to 350F and line an 8×8 inch pan with parchment paper.
- Cream the butter, brown sugar, and granulated sugar until fluffy. Beat in the egg and vanilla.
- Stir in the flour, graham cracker crumbs, and baking powder until a soft dough forms. Press two thirds of the dough into the bottom of the pan.
- Sprinkle the chocolate evenly over the dough, then scatter the marshmallows on top. Crumble the remaining dough over everything.
- Bake for 22 to 25 minutes, until golden. For toasty marshmallows, broil for 1 to 2 minutes at the very end, watching closely. Cool completely before cutting.
Notes
Perfect for sharing
These travel really well, so they are my go to for pool days, potlucks, and lazy weekend hangs. Cut them small because they are rich, then watch them disappear anyway. Summer treats just hit different.
So glad you are here.
