Greek Baked Cod (Plaki)

Greek Baked Cod (Plaki)

Cod baked over stewed tomatoes, onion and olives with lemon and oregano. It is the kind of dinner that feels light and generous at the same time.
Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes
Servings: 4 servings
Course: Main Course
Cuisine: Greek

Ingredients

  • 4 cod fillets about 6 oz each
  • 1 can (28oz) diced tomatoes drained
  • 1 large onion, thinly sliced
  • 4 cloves garlic, sliced
  • 1/2 cup Kalamata olives, halved
  • 2 tbsp capers, drained
  • 1/3 cup olive oil
  • 1 tsp dried oregano
  • 1/3 cup fresh parsley, chopped
  • 1 lemon half juiced, half in wedges
  • 1 tsp salt
  • 1/2 tsp black pepper

Method

  1. Heat the oven to 400 degrees.
  2. Warm the olive oil in an oven safe skillet over medium heat. Cook the onion 6 to 8 minutes until soft and sweet, then add the garlic for 1 minute.
  3. Stir in the tomatoes, olives, capers, oregano and half the salt and pepper. Simmer 10 minutes until it thickens.
  4. Pat the cod dry, season with the remaining salt and pepper, and nestle the fillets into the sauce.
  5. Spoon a little sauce over each piece and bake 15 to 18 minutes, until the fish flakes easily.
  6. Finish with the lemon juice and parsley, and serve with lemon wedges alongside.

Notes

Use a dish just big enough to hold the fillets snugly so the sauce does not spread thin and scorch. Good crusty bread is not optional here.
