Greek Yogurt Breakfast Parfaits
Not every breakfast needs to be a whole production, and on most weekday mornings around here, it absolutely is not. These Greek yogurt breakfast parfaits are my go to when I want something that feels a little put together but takes about as long as pouring a bowl of cereal. They are creamy, crunchy, a little sweet, and they actually keep me full, which during this pregnancy is the whole ballgame.
The best part is that they look so pretty for how little effort they take. Layer some yogurt, some granola, some berries in a cute glass and suddenly your sad Tuesday morning feels like brunch. I am a big believer that small things like this make ordinary days nicer, and I will take all the nice I can get.

Why Greek yogurt is the move
Regular yogurt is fine, but Greek yogurt is where it is at for a breakfast that actually holds you over. It is thicker, creamier, and packed with way more protein, so you are not starving an hour later. I always reach for plain and sweeten it myself with a little honey, because the flavored tubs are usually way sweeter than I want and you lose control of the sugar. A drizzle of good raw honey and a splash of vanilla turns plain yogurt into something special.
The meal prep trick that changed my mornings
If you want to be really on top of things, you can build a few of these ahead in jars at the start of the week. The one rule is to keep the granola separate, either in a little container or layered right at the top, so it does not go soggy sitting in the yogurt overnight. I keep mine in wide mouth wide mouth mason jars because they are easy to layer and they look adorable lined up in the fridge.
For the crunch, use whatever granola you love, or if you are feeling ambitious you can make your own. A good clustery granola with big chunks is my favorite for that satisfying bite against the creamy yogurt.

Notes
Make it your own
This is honestly more of a method than a strict recipe. Use whatever berries are in season, swap in sliced banana or peaches, add a spoonful of nut butter, throw on some chia seeds or coconut flakes. It is the easiest way to feel like you are eating something nice without spending more than five minutes on it. Those are my favorite kind of recipes, the ones that quietly make life a little better.
So glad you are here.
