Greek Yogurt Parfait with Granola and Fresh Peaches
Peach season is genuinely one of my favorite times of year and this parfait is one of the main reasons. There is something about layering cold creamy yogurt with crunchy granola and those sweet juicy peach slices that just feels like summer in a glass. It takes five minutes and somehow looks like you put real effort in.
I make these for myself on weekday mornings when I want something that feels a little special without any actual cooking. They also look great if you have people over for brunch, just set out the components and let everyone build their own. Instant crowd-pleaser, zero stress.
Tips for the Perfect Parfait
Use full-fat Greek yogurt if you can, it is so much thicker and creamier than low-fat and the flavor is better. Layer and assemble just before serving so the granola stays crunchy, once it sits too long in the yogurt it gets soggy. For the peaches, ripe is everything. A hard peach will not taste like much. If peaches are out of season, frozen peaches thawed overnight in the fridge work really well. A drizzle of good honey at the end ties all the flavors together and adds a beautiful finish. If you want to make this more filling, stir a little vanilla extract and a tablespoon of honey right into the yogurt before layering.
