Grilled Mexican Street Corn (Elote)
If summer had a flavor, I am pretty sure it would taste like Mexican street corn. Smoky, creamy, tangy, a little spicy, and finished with salty cotija and a squeeze of lime. The first time I had real elote from a street cart I genuinely could not stop thinking about it, so of course I had to figure out how to make it at home.
The good news is that it is so much easier than it looks. You grill the corn until it is charred and sweet, slather it in a creamy sauce, and roll it in all the good toppings. It is messy in the best way and it makes any backyard cookout feel a little more special.

The char is everything
Do not be shy with the grill. Those little blackened spots are where all the smoky, sweet flavor lives, so let the corn get some real color. Turn it often so it chars evenly without burning, and you will end up with corn that is tender inside and gorgeously caramelized outside.
If you do not have a grill, do not worry. You can get a great char under the broiler or in a screaming hot cast iron skillet. I have made it all three ways and it is delicious every time.
A few things that help
Here are the little tools that make grilling corn a breeze.
- Corn holders so you can eat it off the cob without burning your fingers
- Long grill tongs for turning the corn safely
- Cotija cheese for that authentic salty crumble

Make it your way
If you cannot find cotija, feta is a great stand in. Want it less spicy for the kids? Go light on the chili powder, or use a smoky paprika instead. And if eating it off the cob feels too messy, just slice the kernels off and turn the whole thing into a scoopable street corn salad. Same flavors, fewer napkins.

Notes
Taste of summer
This is the side dish that steals the show at every cookout I bring it to. Smoky, creamy, bright, and just a little bit messy. Make it once and it will be on your summer rotation forever.
So glad you are here.
