Harissa Roasted Cauliflower and Chickpeas Over Couscous
Okay, if you have a jar of harissa in your pantry and have not been using it on roasted vegetables, we need to talk. Harissa is this smoky, spicy North African chili paste and it is honestly one of my favorite secret weapons in the kitchen. Tossed with cauliflower and chickpeas and roasted at high heat until everything gets a little charred and caramelized? It is absolutely incredible.
This Harissa Roasted Cauliflower and Chickpeas Over Couscous is one of those vegetarian dinners that is so flavorful and satisfying, you do not even think about the fact that there is no meat. The couscous is fluffy and simple, and the yogurt drizzle at the end ties everything together with a little cool creaminess.

- Preheat oven to 425F. Toss cauliflower florets and drained chickpeas with harissa paste, 2 tbsp olive oil, cumin, and salt until evenly coated.
- Spread on a large rimmed baking sheet in a single layer. Roast 25-30 minutes until cauliflower is charred at the edges and chickpeas are crispy.
- Meanwhile, place couscous in a heatproof bowl. Pour boiling water or broth over, stir once, cover and let sit 5 minutes. Fluff with a fork and stir in remaining 1 tbsp olive oil.
- Whisk yogurt with lemon juice and a pinch of salt to make the drizzle.
- Serve roasted cauliflower and chickpeas over couscous, drizzle with lemon yogurt, and top with fresh herbs and pomegranate seeds if using.
Notes
What Is Harissa?
Harissa is a North African chili paste made from roasted red peppers, hot peppers, garlic, and spices like cumin and coriander. It is smoky, spicy, and deeply savory all at once. You can find it in most grocery stores now — I love the Mina brand which is available at a lot of stores and also on Amazon. Heat levels vary by brand, so start with a little and taste as you go.
Why Roasting at High Heat Matters
425F is the sweet spot here. The high heat does two important things: it caramelizes the natural sugars in the cauliflower and the harissa, creating those gorgeous charred edges, and it crisps up the chickpeas so they have a little bite. Do not crowd the pan — spread everything in a single layer and let it roast properly.

The Couscous Base
Couscous is one of the easiest things to make — no stovetop babysitting required. You just pour boiling water over it, cover it, and let it steam for 5 minutes. I like to use broth instead of water for extra flavor, and a drizzle of olive oil stirred in at the end keeps it from clumping. A quick swap if you want more protein: use pearl couscous or quinoa instead.
The Yogurt Drizzle Is Not Optional
I know it might seem like a small thing, but the lemon yogurt drizzle is what makes this dish. The tangy coolness against the spicy roasted vegetables is just perfect. If you want to use a small squeeze bottle to drizzle it artfully over the top, honestly the presentation goes from good to stunning.

Make It a Meal Prep Win
This dish is great for meal prep. Roast a big batch of the cauliflower and chickpeas and keep them in the fridge, then reheat over fresh couscous throughout the week. The harissa flavors actually deepen a bit overnight, so leftovers are amazing.
A Weeknight Dinner Worth Repeating
This has become one of my absolute favorite plant-based dinners. Bold flavor, minimal effort, and it comes together in 40 minutes. Perfect for Meatless Monday or honestly any night of the week.
Give it a try and let me know! xo, Pam
