Honey Butter Pork Tenderloin with Roasted Potatoes
There is something about a honey butter glaze that just makes everything better. I have been putting it on everything lately — roasted carrots, chicken thighs, and now this pork tenderloin that has become an absolute house favorite. It is sweet, savory, slightly caramelized on the outside, and so juicy inside. And the best part? The potatoes roast right alongside it, so you have a complete dinner with minimal cleanup.
This Honey Butter Pork Tenderloin with Roasted Potatoes is the kind of meal that looks like you really tried, even when you really did not. Weeknight easy but Sunday dinner impressive.

Notes
Why Pork Tenderloin Is Underrated
Pork tenderloin is one of the leanest, most tender cuts of meat you can buy, and it is usually very affordable too. It cooks fast — about 20 minutes in the oven after a quick sear — and it takes on flavors beautifully. The key is not overcooking it. Pull it at 145F and let it rest, and you will be amazed at how juicy it is.
The Honey Butter Glaze
This glaze is so simple but so good. Honey, melted butter, garlic, Dijon mustard, and smoked paprika. You brush it on before roasting and again halfway through, and it creates this gorgeous caramelized coating that is slightly sticky and packed with flavor. The Dijon adds a little tang that balances the sweetness perfectly.

Tools That Make This Easier
A meat thermometer is truly non-negotiable for pork. I used to guess and end up with either dry or undercooked pork, and a good instant-read thermometer completely changed the game. I also love a heavy rimmed baking sheet for the potatoes — this half sheet pan is my most-used piece of kitchen equipment, no joke.

Getting Perfect Roasted Potatoes
The secret to crispy potatoes is not overcrowding the pan. Give them space and they will roast beautifully. If they are too crowded, they steam instead of roast. Spread them cut side down and do not stir too early — let them develop a crust on the bottom first.

Perfect for Any Night
Whether it is a Tuesday when you need something fast or a Saturday when you want something that feels a little special, this pork tenderloin delivers. It is one of my most reliable go-to dinners and I think it will become one of yours too.
Happy cooking! xo, Pam
