If I had to pick one thing to bring to every potluck, tailgate, or dinner party for the rest of my life, it would genuinely be these jalapeno cheddar cornbread muffins. I have been making some version of this recipe for years and every single time I set them out, people ask me for the recipe before the evening is even over. They are that good.
These muffins are tender and fluffy inside with these perfect golden crispy edges, loaded with sharp cheddar and just enough jalapeno to give you a little kick without being overwhelming. They go with absolutely everything: a bowl of chili, a rack of ribs, a pot of soup, or honestly just warm from the oven with a swipe of honey butter while standing over the kitchen counter. That last option happens in my house more often than I will admit.

Method
- Preheat oven to 400 degrees F. Grease a 12-cup muffin tin generously with butter.
- Whisk together cornmeal, flour, baking powder, and salt in a large bowl.
- In a separate bowl, whisk together buttermilk, eggs, and melted butter.
- Pour wet ingredients into dry and stir just until combined. Do not overmix.
- Fold in shredded cheddar and diced jalapeno.
- Divide batter evenly among muffin cups, filling each about three-quarters full.
- Bake 18 to 20 minutes until golden on top and a toothpick comes out clean. Cool 5 minutes before serving.
Notes
The Key to Fluffy Cornbread Muffins
Two things matter most here. First, do not overmix your batter. Stir until just combined even if you still see a few streaks of flour. Overmixing develops gluten and turns your muffins dense and tough, which is not what we want. Second, use buttermilk if you can. It reacts with the baking powder to create a lighter, more tender crumb and adds a subtle tang that balances the richness of the cheddar perfectly. If you do not have buttermilk, just add a tablespoon of white vinegar to a cup of whole milk and let it sit for five minutes.

How to Customize These Muffins
The base recipe is wonderful as written but there is so much room to play here. Want more heat? Leave some seeds in the jalapenos or add a pinch of cayenne to the batter. Want to go milder? Use diced green onion instead of jalapeno and you still get that pop of color and freshness without the spice. I have also added a can of drained corn kernels to these for extra texture and sweetness and it is absolutely wonderful. A little drizzle of honey on top right before baking gives them this caramelized golden top that is almost like a cornbread muffin meets honey glaze situation.

Tools for This Recipe
- Wilton Nonstick 12 Cup Muffin Pan: A solid 12 cup pan that bakes evenly, so every muffin gets golden edges and pops right out.
- OXO Good Grips Box Grater: Shredding your own sharp cheddar melts so much better than the bagged stuff, and this grater makes it quick.
Make Ahead and Storage
These muffins are at their absolute best warm from the oven but they reheat beautifully. Store them in an airtight container at room temp for up to two days or freeze them individually wrapped for up to a month. To reheat, wrap in foil and warm in a 325 degree oven for about 10 minutes or just pop one in the microwave for 20 to 30 seconds. They are genuinely perfect every time and I hope they become a staple in your kitchen too. xo, Pam
