Cuisine: Korean

Ingredients

  • 14 oz firm tofu drained and pressed
  • 2 tbsp neutral oil
  • 2 tbsp gochujang
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 3 cloves garlic, minced
  • 1/2 cup water
  • 3 green onions, sliced
  • 1 tsp sesame seeds

Method

  1. Press the tofu between paper towels under something heavy for 15 minutes, then slice into 1/2 inch thick rectangles.
  2. Heat the neutral oil in a large skillet over medium high. Fry the tofu in a single layer for 3 to 4 minutes a side, until golden and crisp at the edges.
  3. While it fries, whisk the gochujang, soy sauce, sesame oil, sugar, garlic and water together.
  4. Pour the sauce around the tofu and bring it to a simmer. Spoon it over the pieces as it reduces, about 6 to 8 minutes, until glossy and thickened.
  5. Scatter the green onions and sesame seeds over the top and serve hot over steamed rice.

Notes

Press the tofu well, that is the whole trick to getting a crisp edge. Add a splash of water if the braise tightens before the tofu is glazed.
