Loaded Potato Skins with Bacon and Cheddar
Okay so I made these for game day a few weeks ago and I am not exaggerating when I say the entire tray was gone in about seven minutes. Loaded potato skins are one of those appetizers that sounds kind of basic until you make them from scratch and realize they are anything but.
The secret is double-baking the potato. You bake the whole potato first, scoop it out, brush everything with butter, crisp up the shell, THEN add the cheese and bacon. That step makes them legit restaurant-level crispy. Skip it and you get soggy skins. Do not skip it.
Why These Are the Only Potato Skins You Need
I have tried a lot of shortcuts over the years. Microwave the potato first? Nope. Skip the butter brush? The texture is off. Just bake them once? They end up soft on the outside. Doing it the full way, baking the potato, crisping the shell separately, then loading them up, takes more time but produces something that genuinely tastes like it came from a good sports bar.
Sharp cheddar is non-negotiable for me. Mild cheddar just kind of melts into nothing. Sharp gives you that flavor punch that holds up against the salty bacon. And please, real bacon strips you cook yourself, not the pre-crumbled stuff. The texture difference matters.
I use good russet potatoes for this, nothing fancy, just large ones with thick skins. A heads up, some of these are affiliate links, which just means I get a tiny commission at no cost to you.
Tips for Perfect Potato Skins Every Time
- Leave about 1/4 inch of potato flesh inside the skin when you scoop. Too thin and the skin tears. Too thick and it is not really a skin anymore.
- The butter brush step is not optional. It is what gives you those crispy brown edges.
- Serve immediately. These do not wait well. Get them on the table hot.
- Save the scooped potato flesh. Mashed potatoes tomorrow, you are welcome.

Ingredients
Method
- Preheat oven to 400 degrees F. Pierce potatoes all over with a fork, rub with olive oil, and place on a baking sheet. Bake for 50 to 55 minutes until tender. Let cool for 10 minutes.
- Cut each potato in half lengthwise. Scoop out most of the flesh leaving about a 1/4 inch shell. Save the scooped potato for mashed potatoes or another use.
- Brush the inside and outside of the potato skins with melted butter. Season with salt, pepper, and garlic powder. Place skin-side up on the baking sheet and bake 10 minutes until edges are crispy.
- Flip the skins over, fill each one with shredded cheddar and crumbled bacon.
- Return to oven and bake 5 minutes until cheese is melted and bubbly.
- Top with sour cream and sliced green onions. Serve immediately.
Notes
These are always a hit at parties, game days, or honestly just a random Tuesday when you want something that feels a little extra. Make the full batch. You will not regret it.
Drop a comment and let me know if you tried them! So glad you are here. Pam
