Mango tropical smoothie in a glass with lime garnish

Mango Coconut Smoothie

Some mornings I want a smoothie that feels like a treat. Not just healthy fuel, but something that actually makes me excited to drink it. This Mango Coconut Smoothie is exactly that. It is thick, creamy, tropical, and genuinely feels like you are on vacation while standing in your kitchen at 7am. I will take it.

Five ingredients, five minutes, and zero complaints from anyone in my house. My kids ask for it constantly and I am always happy to make it because it is loaded with good stuff while tasting like dessert. Win win.

The Secret to the Creamiest Mango Smoothie

Full-fat canned coconut milk is the move. I know it feels indulgent but it is what makes this smoothie thick and luscious instead of watery and sad. Shake the can really well before opening since the cream separates and you want it fully mixed in.

Frozen mango straight from the bag gives you that beautiful thick, ice-cream-like consistency without diluting the flavor with ice. Fresh mango is delicious but you lose that creamy texture. Keep a big bag of frozen mango in your freezer and this recipe is always 5 minutes away.

Do not skip the lime juice. It sounds weird in a coconut smoothie but it brightens everything up and stops it from tasting flat. Just a squeeze makes a real difference.

Make It a Smoothie Bowl

Use half the coconut milk for a thick, spoonable smoothie bowl consistency. Pour into a bowl and top with granola, sliced fresh mango, toasted coconut flakes, and a drizzle of honey. It looks like a magazine cover and takes about 8 minutes total. You are welcome.

Servings: 2 glasses
Course: Drinks
Cuisine: American

Ingredients

  • 2 cups frozen mango chunks
  • 1 cup full-fat coconut milk canned, shaken well
  • 1 tbsp fresh lime juice about half a lime
  • 1 tsp honey or agave optional, mango is often sweet enough
  • 0.5 tsp pure vanilla extract
  • 1 pinch ground turmeric optional, adds gorgeous golden color

Method

  1. Add frozen mango, coconut milk, lime juice, honey if using, and vanilla to a blender.
  2. Blend on high until completely smooth and creamy, about 60 seconds. Add turmeric if using and blend 10 more seconds.
  3. Taste and adjust sweetness or lime. Pour into glasses and serve immediately, topped with a lime wedge or toasted coconut if desired.

Notes

For a thicker smoothie bowl consistency, use less coconut milk. For a thinner drink, add a splash more. Frozen mango straight from the bag gives the best thick, cold texture without watering it down with ice.

Comment below if you make this one! And tell me if you went with the turmeric for the golden color. It does not change the flavor at all but it looks absolutely stunning.

xo, Pam
