Creamy golden baked chicken casserole topped with fresh herbs in a white dish

Million Dollar Chicken Casserole (The School Night Dinner That Saves Me Every Time)

There is a very specific kind of tired that shows up around 5:15 on a school night. The backpacks are still sitting by the door, somebody just remembered they need a poster board by tomorrow, and I am standing in front of the open fridge waiting for dinner to assemble itself. It never does. This casserole is the closest thing I have found.

Million dollar chicken casserole has been in my rotation for years and it earns the name every single time. It is creamy and cheesy under a buttery cracker topping, it starts with a rotisserie chicken so there is almost no real cooking involved, and my kids eat it without one single round of negotiation. That last part alone is worth a million dollars.

Heads up, a couple of the links below are affiliate links, which just means I get a tiny commission at no cost to you.

Why you will love this one

It is a ten minute assembly job. You stir, you spread, you bake. Nobody has to brown meat or babysit a skillet, which matters when you are also refereeing a homework argument.

It stretches. One 9×13 feeds eight people, or it feeds my family with enough left over for lunches the next day. That is the math I actually care about in September.

It travels. This is my go to for new baby meals, sick friends, and whatever sign up sheet is going around. It reheats beautifully, which is honestly not true of every casserole.

It is a pantry recipe. The only thing I have to plan for is the chicken, and even that comes from the hot case at the grocery store on the way home.

Ingredients

For the casserole

  • 4 cups cooked shredded chicken, about one rotisserie chicken
  • 8 oz cream cheese, softened
  • 1 cup small curd cottage cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh chives or parsley, chopped

For the buttery topping

  • 1 sleeve buttery round crackers, crushed, about 35 crackers
  • 4 tbsp salted butter, melted
  • 1/4 cup grated Parmesan

One note on equipment. A real ceramic 9×13 baking dish makes a difference here because it holds heat evenly and the edges do not scorch while the middle catches up. And if you are shredding your own chicken, a set of meat shredder claws turns a ten minute job into a ninety second one. I resisted buying them for an embarrassingly long time and I was wrong.

How to make it

  1. Heat the oven to 350F and lightly grease your 9×13 baking dish.
  2. In a large bowl, beat the softened cream cheese until it is smooth. This is the step people rush and then wonder why there are lumps. Give it a minute.
  3. Stir in the cottage cheese, sour cream, mayonnaise, and cream of chicken soup until the mixture is even and creamy.
  4. Add the Parmesan, garlic powder, onion powder, salt, pepper, and chives, then stir again.
  5. Fold in the shredded chicken until every piece is coated. Spread it into the dish and smooth the top.
  6. Toss the crushed crackers with the melted butter and the remaining Parmesan, then scatter that over the whole casserole.
  7. Bake uncovered for 30 to 35 minutes, until the edges bubble and the topping is deep golden. If it browns early, tent it loosely with foil.
  8. Let it rest 10 minutes before serving. It sets up as it cools and scoops so much cleaner.

Tips, swaps, and make ahead notes

The cottage cheese is not optional. I know. Hear me out. It melts into the sauce and disappears completely, and it is what makes this creamy instead of heavy. Nobody has ever guessed it was in there. If you truly cannot, use ricotta.

Make it ahead. Assemble everything except the cracker topping, cover it, and refrigerate up to 24 hours. Add the topping right before it goes in and give it about 10 extra minutes.

Freeze it. Freeze unbaked and untopped for up to three months. Thaw overnight in the fridge, add the topping, and bake as written.

Sneak in vegetables. Two cups of steamed broccoli or a drained can of green chiles both work beautifully and nobody riots. Frozen peas are a step too far in my house, but you know your people.

Make it a little spicy. A teaspoon of hot sauce or a few dashes of cayenne in the cream cheese mixture wakes the whole thing up without making it a kid problem.

What to serve with it. Honestly, a bagged Caesar salad and some crusty bread. This is not the night for a side dish project.

Some dinners are a project and some dinners are a rescue. This one is a rescue, and I think there is real value in having two or three of those you can make without looking anything up. The school year is long. Give yourself the easy win.

If you make it, come tell me what you added. I am always looking for a new way to sneak a vegetable past a seven year old, so drop it in the comments.

So glad you are here.
xo, Pam
