No-Bake Strawberry Icebox Cake
There is no version of me turning on the oven in August. Not happening. So when I want something sweet and a little special for a summer get together, I make a no bake strawberry icebox cake, and it has never once let me down.
It is layers of cookies and whipped cream and fresh strawberries that sit in the fridge overnight and turn into something soft and cakey and dreamy. You do almost nothing and it comes out looking like a bakery made it. My kind of dessert.

The magic of an icebox cake
The whole trick is time, not effort. As it chills overnight, the cookies soak up moisture from the cream and soften into tender cake like layers. You wake up to a dessert that looks like you have real skills, when really you just stacked things in a dish and went to bed.
What you need
Heavy whipping cream, a little sugar and vanilla, a couple boxes of graham crackers or thin shortbread cookies, and a big pile of fresh strawberries. That is it. No baking, no thermometer, no stress.
A hand mixer makes quick work of the whipped cream, and a clear trifle dish or any glass dish shows off those pretty layers. People eat with their eyes first, and the layers do a lot of the impressing for you.

How to put it together
Whip the cream with sugar and vanilla until it holds soft peaks. Slice your strawberries. Then layer, cookies, cream, berries, and repeat until you run out, finishing with cream and a few whole berries on top. Cover and refrigerate at least six hours, overnight is even better. Patience is the only hard part.
Make it your own
Swap in raspberries or peaches, add a layer of lemon curd, or crumble a little chocolate over the top. It is forgiving and endlessly adaptable, which is exactly why it lives in my summer rotation.
The takeaway
The best summer desserts are the ones that let you stay out of a hot kitchen. Stack, chill, and let the fridge do the work. If you make one this season, tell me what fruit you used, my comments are basically a dessert swap at this point.
So glad you are here.
Pam
