No-Churn Vanilla Ice Cream
I resisted making homemade ice cream for years because I assumed I needed a fancy machine and a free afternoon. Then I discovered no-churn ice cream, and friends, my whole summer changed. Three ingredients, no special equipment, and a freezer. That is genuinely it.
This vanilla is creamy and scoopable and tastes so much better than the tub from the store. My kids think I am a magician, and I let them keep believing it. It has become our go-to for hot Kansas City evenings on the porch.

How three ingredients turn into magic
The trick is whipped cream. When you whip heavy cream to stiff peaks, you are folding in all this air, and that air is what keeps the ice cream soft and scoopable instead of rock hard. The sweetened condensed milk does double duty, adding sweetness and keeping the texture smooth without any ice crystals.
A hand mixer makes whipping the cream effortless, and I freeze mine in a simple metal loaf pan because it chills fast and scoops easily.

Make it your own flavor lab
Vanilla is the perfect base, but this recipe is begging to be customized. Swirl in fudge, fold in crushed cookies, add fresh berries, or drop in a spoonful of peanut butter. Use a good quality pure vanilla extract because in a recipe this simple, the vanilla really gets to shine.
My kids love a sprinkle station so everyone can build their own bowl. It turns a regular weeknight into a little event, and I am always here for that.

Notes
Go make some
Whip it up tonight and you will have homemade ice cream by tomorrow. Once you realize how easy this is, I promise the store-bought stuff loses a little of its shine. Enjoy every creamy spoonful.
So glad you are here.
