Summer desserts should be simple. Like, I should not be standing over a hot stove sweating when it is 95 degrees outside. This No-Churn Watermelon Sorbet is my answer to every hot summer day, and it only has three real ingredients. Frozen watermelon, lime juice, and a drizzle of honey. That is genuinely it.
No ice cream maker needed. No complicated techniques. You freeze the watermelon, blend it, and eat it. I make this on repeat from June through September and my kids think I am a genius. I am not going to correct them.
Tips for the Best Watermelon Sorbet
The watermelon needs to be frozen solid before you blend it. I usually cut mine up in the morning, freeze it all day, and make the sorbet after dinner. Chunks that are only half frozen will give you a slushy smoothie instead of sorbet, which is still delicious but a different vibe.
A high-powered blender is really helpful here. A food processor works too but takes a little longer. If your blender is struggling, let the watermelon thaw for 5 minutes before trying again, it should loosen up enough to blend smoothly.
Taste before you serve and adjust the honey. Some watermelons are super sweet on their own and need almost nothing. Others need a little more help. Trust your tastebuds.
The lime juice is not optional in my opinion. It adds brightness and cuts through the sweetness in a way that makes this taste like an actual sorbet from a nice restaurant instead of just blended frozen fruit.
Fun Variations
Add a few fresh mint leaves to the blender for a watermelon mint sorbet. Stir in some chili powder or Tajin on top for a Mexican street food inspired version. Blend in a cup of frozen strawberries for a watermelon strawberry twist. All incredible.

Ingredients
Method
- Cut watermelon into chunks, spread on a parchment-lined baking sheet, and freeze until completely solid, at least 4 hours or overnight.
- Add the frozen watermelon chunks to a high-powered blender or food processor. Add lime juice, honey, and salt.
- Blend on high, stopping to scrape down the sides as needed, until completely smooth and creamy. This takes 2 to 3 minutes.
- Taste and adjust sweetness with a little more honey if needed. Serve immediately as a soft-serve style sorbet, or transfer to a freezer container and freeze 1 more hour for a firmer scoop.
