Old-Fashioned Strawberry Shortcake
Strawberry shortcake is summer on a plate to me. Not the spongy store-bought cups, but the real old-fashioned kind with tender, buttery biscuits, strawberries that have been sitting in their own sweet juices, and a generous pile of fresh whipped cream. It is the dessert that tastes like every warm evening of my childhood.
When Kansas City strawberries are at their peak, this is what I want to make. It feels a little nostalgic and a little fancy, and yet it could not be simpler. Three easy components that come together into something genuinely special.

Let those berries get juicy
The secret to the best strawberry shortcake is macerating the berries. That just means tossing the sliced strawberries with sugar and letting them sit. The sugar pulls out all those gorgeous juices and creates a natural syrup that soaks into the biscuit. Give them at least thirty minutes, and do not skip it. It is the difference between fine and unforgettable.
I like to slice mine while the biscuits bake so everything is ready to assemble at the same time.
Biscuits, not cake
Real shortcake is made with biscuits, and the trick to tender ones is keeping your butter cold and not overworking the dough. Cold butter creates little pockets of steam as it bakes, giving you those lovely flaky layers. A simple biscuit cutter gives you clean edges that rise tall and proud.
For the whipped cream, a hand mixer gets you to soft, billowy peaks in about a minute. Whip it just until it holds its shape so it stays light and cloud-like.

Notes
Taste of summer
Assemble these right before serving so the biscuits stay tender, then pile everything as high as you dare. This is the dessert I hope your family asks for all summer long. It is a simple little joy, and we could all use more of those.
So glad you are here.
xo, Pam
