One-Pan Lemon Garlic Butter Salmon
If you are looking for a dinner that feels a little fancy but is secretly almost no work, this one-pan lemon garlic butter salmon is the one. It comes together in under thirty minutes, dirties exactly one pan, and tastes like something you would happily pay for at a restaurant. On the busy weeknights when I still want a real dinner, this is my move.
I used to be intimidated by cooking salmon, convinced I would dry it out or somehow mess it up. Turns out it is one of the most forgiving things you can make, as long as you do not walk away and forget about it. A little butter, a lot of garlic, a good squeeze of lemon, and you are basically done. Even my kid eats this, which around here counts as a five star review.

The one rule for perfect salmon
If you take nothing else from this post, take this, do not overcook your salmon. That is the single thing that separates restaurant quality salmon from the sad dry kind. You want to pull it the moment it flakes easily and is just barely opaque in the middle, because it keeps cooking from the residual heat even after it leaves the oven. When in doubt, underdo it slightly. It is so much better a touch underdone than overdone.
I bake mine on a sturdy rimmed sheet pan lined with parchment so cleanup is basically nothing, which is the whole appeal of a one pan dinner. A thin fish spatula makes lifting the fillets off the pan without them falling apart so much easier too.
Make it a full meal
The beauty of this being a sheet pan situation is that you can roast a vegetable right alongside the salmon. Broccoli, asparagus, or green beans all work great, just toss them in a little olive oil and salt and add them to the pan. Add heartier vegetables like potatoes a bit earlier since they take longer. Dinner and a side, one pan, almost no dishes. That is the dream.
A pinch of flaky salt and an extra squeeze of fresh lemon right before serving really makes it sing. I keep a good flaky sea salt on hand just for finishing dishes like this, it is a tiny thing that makes everything taste more intentional.

Notes
Your new weeknight hero
This is the recipe I reach for when I want to feel like I have my act together on a Tuesday. It is fast, it is healthy, it is genuinely delicious, and it makes the kitchen smell incredible. Once you make it a couple times you will not even need to look at the recipe, and that is when a dish really earns a permanent spot in the rotation.
So glad you are here.
xo, Pam
