Okay, real talk: this is the chicken recipe I make when I want dinner to feel fancy but I have zero time or energy. One pan, about 45 minutes, and it tastes like something you would order at a nice restaurant. The lemon and herb combo is just *chef’s kiss*.
I started making this on random Tuesday nights and now my family requests it weekly. The skin gets so crispy in the oven and the garlic-lemon drippings at the bottom of the pan are honestly the best part. Serve it over rice or with crusty bread and you will not hear any complaints.
Why This Works on a Weeknight
Bone-in thighs are so forgiving. Unlike chicken breasts, they stay juicy even if you leave them in a few extra minutes. The sear on the stovetop first is the secret step that gives you that golden skin. And cleanup is just one pan. One. That alone makes it a winner in my house.
The herb mix comes together fast and you probably already have everything in your pantry. Dried oregano, thyme, paprika, garlic, and a lemon. That is it. Simple ingredients, big flavor, minimal stress.

One-Pan Lemon Herb Chicken Thighs
Ingredients
Method
- Preheat oven to 425F. Pat chicken thighs dry with paper towels.
- In a small bowl, mix together olive oil, garlic, lemon zest, lemon juice, oregano, thyme, paprika, salt, and pepper.
- Rub the herb mixture all over the chicken thighs, coating both sides.
- Heat an oven-safe skillet over medium-high heat. Add the chicken skin-side down and sear for 4 to 5 minutes until golden.
- Flip the chicken and transfer the skillet to the oven. Roast for 25 to 30 minutes until internal temp reaches 165F.
- Garnish with fresh parsley and serve with pan drippings drizzled over the top.
Notes
Tools for This Recipe
- Lodge 10.25 Inch Cast Iron Skillet: It goes straight from the stovetop sear into the oven, which is exactly what this one pan method needs.
- TempPro Instant Read Meat Thermometer: Takes the guesswork out of knowing when the thighs are cooked through.
- OXO Good Grips Citrus Squeezer: Gets every bit of juice out of the lemon without seeds landing in the pan.
If you make this, drop a comment and tell me what you served it with! I want all the side dish ideas.
