Overnight Blueberry Baked Oatmeal
There is a specific kind of morning chaos that only a mom understands. Everyone wakes up starving at the same minute, nobody can find a shoe, and somehow I am supposed to produce a hot breakfast while also locating a permission slip. This baked oatmeal is my quiet little cheat code for those mornings. I throw it together the night before, slide it in the fridge, and in the morning it goes straight into the oven while I deal with the shoe situation.
It comes out warm and just sweet enough, with pockets of jammy blueberries in every bite. It feels like a treat but it is really just oats, so I never feel weird about a second helping.

Why I keep coming back to this one
Make-ahead breakfasts live or die by how good they are reheated, and this one actually gets better. The oats soak up the custard overnight so the texture turns soft and almost bread-pudding-like. It also stretches. One pan feeds my crew for two mornings, which during a busy week feels like a small miracle.
A few honest tips
Use old-fashioned rolled oats, not quick oats, or you will end up with mush. Frozen blueberries work great and you do not even need to thaw them. And do not skip the overnight chill if you can help it, that resting time is what makes the inside so plush. If you are short on time though, you can bake it right away and it is still lovely, just a touch more loose.

I make this in a basic 8×8 ceramic baking dish, and I buy old-fashioned rolled oats in the big bag because we go through them fast.

The takeaway
If your mornings feel like a sprint, do yourself the favor and prep this the night before. Future you, standing in the kitchen with a hot pan and a calm-ish house, will be so grateful. If you try it, come tell me how it went, I love hearing what berries you used.
So glad you are here.
