Overnight oats topped with fresh mango and coconut flakes

Overnight Oats with Mango and Coconut

Some mornings I am just not a person who cooks. You know the ones. I barely want to open the fridge. That is where overnight oats saved my whole breakfast game, and this mango coconut version is the one I keep coming back to.

You throw everything together in about five minutes the night before, and in the morning you have this creamy, tropical, actually-filling breakfast waiting in the fridge. No cooking. No decisions. Just mango and coconut on top and you are ready to face the day like a functioning adult.

Tips for Perfect Overnight Oats

Use rolled oats, not instant, they hold up overnight and give you that thick, creamy texture. Chia seeds are the secret to getting it to thicken up perfectly, do not skip them. If your oats look too thick in the morning, just stir in a splash more milk. The sweetener is totally flexible, honey, maple syrup, or even a mashed banana all work great. For the mango, fresh is amazing but thawed frozen mango works just as well and is way easier. Toast your coconut flakes in a dry pan for 2 minutes if you want extra crunch and flavor, it makes a noticeable difference.
